Carlotta Andrea Cofano is the winner of the XVI Negrini Creative Cuisine Competition

Carlotta Andrea Cofano, the chef at Piero Trattoria Pizzeria in Barcelona, has won the XVI Negrini Creative Cuisine Competition at the XXI edition of Madrid Fusion with her recipe "Italia venerdí sera". Trained in food design at IED Barcelona, she is the first woman to win the contest, which challenges contestants to create a dish using at least three Italian ingredients, one of which must be Negrini truffled mortadella this year.

Her winning recipe features fried ravioli made from 36-month-aged cheese and mortadella, which may seem simple but was challenging to incorporate and impressed the judges. As a reward, Cofano will be awarded a gastronomic trip to Italy. She will visit restaurants, wineries, and food production centres and attend presentation courses.
